The answer is actually pretty simple: they use a medium that the brain is not supposed to use, and is not able to process. (I’m paraphrasing here. You need to check it out.)
As we have seen, the brain’s processing is very specialized for the sensory systems, and it is very difficult for it to process something that it can’t understand. When you tell an apple to hold its shape, you don’t tell the brain that you want it to fall straight down, you simply tell it to fall down so that it falls straight down. The brain interprets what you are trying to tell it as a direct request for it to do a certain step or process.
The same sort of thing applies during many forms of magic. Say, for example, you want someone to perform a trick in front of you that requires some sort of object. The brain processes the object and the task that it tasks the mind with, while the magician takes the visual input and shapes the object to a particular level of difficulty and time required, then performs the magic.
When we perform magic tricks, we are able to take the mental inputs that go into the tasks and convert them into something that the brain can understand. I could explain this process in terms of the neurons’ ability to understand complex inputs, but, again, it requires a little more explanation. The gist is this.
When the brain is doing something well, it has a lot of neurons that process that task quickly, and when the activity is interrupted, it starts to over-process and re-examine the task. So, while someone might be able to perform magic tricks well, they may have not figured out how to do any of these things in the way that the brain expects, leading to over- or under-performance.
Some magic tricks involve doing things in a way so that the brain has trouble understanding them properly — what I call an “interference effect”. A simple example of this would be the magician’s hands, as you see in the movie and as most practitioners will recognize. He has a series of gestures that are supposed to be performed by the viewer’s mind, but the magician cannot perform the gestures, and it has this “interference” effect, where the brain has to re-do the task that the mind has been programmed to do, and then the mind will have no way to re-experience that task on an appropriate level.
