In my view, mini tackle is where a player is put in a position to be tackled in exchange for a few points. The player then turns his attention to blocking, which results in either catching the ball or kicking the ball into an area the other defender can’t get to – both of these are not always possible.
I’ll do a quick run-down of that in the below table.

Now, note that in this case the goal is to intercept the ball and score the extra point – this is not actually very effective because it requires a tackle, so is not the most effective technique to use to score a goal, but it is the most popular one to use.
Here’s how it works – I’ll note that it’s a combination of different techniques.
The player will have a receiver who is running down the field with the ball – he’s going to throw it a few yards towards where my defensive player is standing. I’ll take a couple of steps backwards towards my defensive line so that I can get a better shot at intercepting the ball.
At the point that my receiver is running down the field as I’m walking backwards, my defensive line goes one of two ways – we either go one direction to cover the receiver, which is usually a long run to stop and block the ball. Or we go the other way to catch the ball.
If we go in the opposite direction as my line goes, we then make a run across the field to catch the ball and gain 7 yards. Otherwise, we try to catch the ball behind our two defensive linemen. If we can’t catch the ball with the two players behind me, we keep going and gain 6 yards.

It’s easy for a single player to do all of that at the level he might with a passing game, however, and it’s a lot harder for two or three players doing a lot of the same thing.
Again, the idea is that the goal is to stop, stop, stop the opponent. This means that our defensive player is going to cover the receiver, and we block him to limit the yards he gains. If the pass is short, the receiver will not gain a ton of yards, but the safety in the secondary will lose a lot of yards from us – which is the main reason why we are trying to catch the ball.
The catch is the big problem.
