I don’t have a lot of experience editing color, but I have some experience with doing color correct the JPEG in Photoshop.

What’s the deal with that white/gray balance?
A lot of the time, you’re trying to get things similar to what you’re shooting with – meaning you try to keep the same color temperature in Photoshop and keep the white balance to be the closest match that you can get. If you don’t do the same thing, your shot can look too orange.
What are the most effective ways to correct JPEG color, both within Photoshop and beyond?
If you want to go with an exact calibration, or if you just don’t like the color of the original image, then a ton of adjustments and tweaks can be done in Photoshop to give it a match – but in most cases, it will look better with a slight adjustment to the black and white levels if you know what you’re looking for.
And the best way to tell if a picture is ready for printing or for digital, is to see how sharp it is.
Why can’t I edit JPEGs in Color?
Some people have a bad memory, with this one, because they thought that they could edit, but it was a big deal to print out and do it themselves.
The easiest way to tell if you’ll be doing a real conversion, or if it’s something the printer or lab will be doing to give you a higher quality file at a cheaper price, is to ask it “What does this photo/print look like?” Or how would a digital file look like if it was done in Adobe Camera Raw rather than Photoshop?
There’s also a common misconception within the Adobe community which is that you can only edit JPEGs without color correction if you print them out.
If you edit by using your computer and Photoshop, and print out (or otherwise display them in public), you’d be well advised to make them available on your website or in a local printing shop using a color space.
