E flat is very different to other major scale modes.
Most guitar players who play in the key of C, like myself, have to use a different set of scales to build up the tension for the E, B and D. Instead of a major E on a G string, they can have a minor E to E to an E7 in C. So they use other scales instead when starting over C or when switching keys.
E Flat on the other hand allows us to build up the tension.

So the E is a different scale to the other notes on the instrument.

Using an E flat major triad for C
So what does that mean for a C minor chord that the D, E and F are using?
The E flat major triad for minor chords sounds very different to the E flat major triad for major chords.
In a minor chord, we can build up to the root note of the major chord first, before we reach the note D, E or F.
In a major chord, we can start the progression with those notes (D, E or F of the major chord) and then build up to the root again. Then we move on to the other notes of the chord.
For instance, we can build up to G as G, then build up to F# (or any other scale of your choice) as F#, then build up to B flat (the G# chord is also the first note of the C minor minor blues note).

Major G# (A#)
To get a C minor triad, you can move the lower note of the G# chord to the bottom of the C minor pentatonic scale (A#), as shown below.

The key can become G major G#, or C minor C7
(or any other scale).
